Ingredients for French Boule Bread: Bread flour 250g, Water 150-160g, Sugar 15g, Salt 3g, Olive oil 15g, Yeast 3g, Black sesame seeds as needed, Butter as needed. Steps for making French Boule Bread:
Step 1: Put all ingredients except salt and black sesame seeds into the mixing bucket, mix on a 2nd speed with a stand mixer for about 2 minutes, then knead on a 4-5th speed for about 8 minutes.
Step 2: Knead until a rough, serrated film is formed.
Step 3: Add 3g of salt and the required amount of black sesame seeds, mix evenly on a 2nd speed, approximately 3 minutes.
Step 4: After the dough is well-kneaded and smooth, shape it and place it into a container, cover with plastic wrap, and let it rise at room temperature for 1 hour before refrigerating for 16 hours at low temperature.
Step 5: This is the dough after being taken out of the refrigerator after low-temperature fermentation.
Step 6: The interior of the dough is in a silky, honeycomb pattern, soft and fluffy.
Step 7: Divide the dough evenly into 8 portions, each about 55g.
Step 8: Deflate, round, and place into a baking tray. If using a regular tray, sprinkle some flour on it. Place in the oven and set to proof mode at 40 degrees for 25 minutes.
Step 9: After the second proofing, sprinkle some bread flour on the surface of the dough.
Step 10: Make a deep incision on the top of the dough with a sharp blade and place a piece of butter into the cut.
Step 11: Bake in a preheated oven at 200 degrees (top and bottom heat) for 15-18 minutes.
Step 12: Remove from the oven and let it cool on a rack. I prefer a deeper color, crispy on the outside and tender on the inside, with a knocking sound when tapped by hand.
