Delicious Whole Wheat French Bread Recipe

I absolutely adore this type of small bread, oil-free and sugar-free, yet it is brimming with the aroma of wheat. Method for Whole Wheat French Bread:


Step 1: Add 75g of water to the whole wheat flour.


Step 2: Stir well and refrigerate for at least one night or four hours.


Step 3: Place all ingredients except black sesame seeds and salt into a stand mixer.


Step 4: Knead until a thick gluten membrane forms, then add salt and black sesame seeds, and mix well.


Step 5: Round the dough and seal it for fermentation until it doubles in size.


Step 6: Divide the dough into 9 portions.


Step 7: Round each portion, pinch the bottom to seal, and place on a baking tray lined with parchment paper.


Step 8: Second fermentation in a warm and humid environment (35°C) for 40 minutes.


Step 9: Preheat the oven to 200°C, dust the dough surface with flour, and make a slash.


Step 10: Place in the lower rack of the oven and bake at 185°C for 16 minutes.
